Tacos Carnitas

Roasted pork- perfect for tacos, sliders, or straight out of the pan. Red and Yellow Sauce are a match made in heaven for this humble cut of meat

Tacos Carnitas

SERVES 8-10 plus

Ingredients

Braised Red and Yellow Pork

  • 3-4 pound pork butt or shoulder

  • 1/3 C Llamacita Yellow Sauce

  • 1/3 C Llamacita Red Sauce

  • 3/4 C water

  • 1.5 T Salt* (no need to be precise, a light second Tablespoon)

  • 1 medium onion- quartered

  • 4 garlic cloves or sprinkle of garlic powder

  • 4 cloves or 1/4 teaspoon ground

  • half of an orange- sliced

    Accoutrements

  • diced red, white, or yellow onion

  • chopped cilantro

  • jalapeno- diced or thinly sliced

  • Any and all Llamacita Sauces

  • limes

  • pickled red onion and carrots

  • favorite corn or flour taco sized tortillas

Instructions

Preheat oven to 350

Find your favorite petite dutch oven or roasting pan/casserole dish, you just want to make sure you can cover it and of course keep all the juices in. I usually use a half hotel pan. You can also do this in the slow cooker.

Sprinkle salt alllll over pork, let sit for a few minutes while you gather your other ingredients. Place pork in pan and massage with sauces, if that’s weird for you, you can always just pour in and over. Add water, onion, garlic clove or powder, whole clove or powder, and your sliced oranges.

If using a dutch oven, I like to place a parchment paper over the pan before the lid goes on- this ensures less liquid evaporation during cooking. If using a casserole dish cover tightly with saran wrap and then foil. You can also use parchment and foil as well.

Bake in oven for 4 hours or slow cooker for 8.

Crisp it up! Carefully remove pork and place on a pan/baking sheet and do a chunky shred. Ladle some of the jus over the pork, optional to add more Yellow or Red. Place under broil and stay close! If looking for pulled pork no crispies, do not broil and proceed with sliders, or other applications.

Arrange on platter with warm tortillas and accoutrements and enjoy!
