Honey Habanero Chicken Wings

Sweet and spicy, addictively delicious, these wings are a crowd favorite.

Honey Habanero Wings

SERVES 4

Ingredients

  • 3 lbs chicken wings

  • brine- 1.5 quarts water, 1/2C salt, 1/3C sugar, ice

  • 6 oz Honey Habanero Sauce

  • 3 Tbsp butter

  • Oil for frying

  • Serve with Cotija Green Sauce side

Instructions

  • Heat 2 cups water with salt and sugar to dissolve, place in 2 quart container, add remaining cold water and 1 cup ice

  • Add chicken wings to container or divide into two large ziploc bags and top with brine, refrigerate for 2-4 hours.

  • Remove wings from brine and place on sheet tray; bake in 350 degree oven for 30-40 minutes, flipping half way through. Great place to chill over night if needed.

  • Fry time- Heat oil to 375 and fry in manageable batches and place on sheet tray with rack in 225 degree oven.

  • Sauce time- Heat Honey Habanero Sauce in shallow pan, whisk in butter.

  • Place warm wings in bowl and toss with sauce. Enjoy with creamy Cotija Green sauce on the side

  • Cotija Green Sauce Side-

    1/2C mayo, 1/2C sour cream, 1/3C Llamacita Green Sauce, 1/2C crumbled Cotija cheese (plus more for garnish), squeeze of lime.

  • Mix all ingredients and serve
